Usuki Senbei (臼杵煎餅)

Beppu (別府) is located in the southern island of Kyushu and is Japan’s most famous hot spring, producing more hot spring water than any other region in Japan. Unlike many other onsen towns where you have to drill to access the hot spring, at Beppu the hot springs are bubbling up to the surface.

This snack first became popular in the Beppu region around the 1700s. It’s a double baked senbei that’s hand glazed with a mixture of ginger, sugar, and honey.
