Beppu (別府) is located in the southern island of Kyushu and is Japan’s most famous hot spring, producing more hot spring water than any other region in Japan. Unlike many other onsen towns where you have to drill to access the hot spring, at Beppu the hot springs are bubbling up to the surface.
Nakamura has been making snacks in Beppu for close to 100 years. This Karukan snack is made using a mixture of stone ground yam and rice flour, which is then filled with Anko red bean paste and steamed in a clay cauldron for 1 hour. It’s perfect with a cup of green tea.
