Yuba Senbei

Yuba, or tofu skin, has been used in traditional Japanese cooking for hundreds of years. Even to this day, Japanese Buddhist monks who adhere to strict vegetarian diets eat yuba on a consistent basis. This senbei is a simple, crispy cracker version of yuba from the rural prefecture of Tochigi.
